How To Make Brazil Nut Milk

Oh yes that mystical nut so high in selenium and other essential minerals. Brazil Nuts are also loaded with vitamin E and B vitamins, high in fiber and protein, and just deliciously special since they come from so far away (at least for me).  I used to think brazil nuts were really expensive, but in my corner of the world they are actually a little bit cheaper than almonds by the pound. These highly nutritious nuts make a wicked good milk to fuel you throughout the day.

In a final farewell to sweetness, last night both J and I indulged in *ahem* 4 pieces each of the delectable cinnamon toast crunch raw pie. Can’t say it was worth it, although every bite was so good, neither of us slept well and baby Mav was up all night. Too much energy for us all so late at night, oops.  Needless to say we couldn’t ditch our coffee habit this morning. Although we both passed on the added cream and sugar regime. I did whip up a whole30 friendly version- a can of coconut milk and 2 eggs blended on high for 30 seconds.  A good substitute for dairy indeed, though it is a bit odd to have raw egg in your morning coffee ( I didn’t tell J, he’d flip). I trust our eggs, they come straight from our 25 or so backyard chickens, I probably wouldn’t trust commercially raised hens. What a blessing to know where things come from these days.

Today I’ll tell you a little story.  Once upon a time I was a devout vegetarian. Once upon that time I went to Jamaica and while my family went the famous Scotchies to dabble in world class jerk chicken, I passed. It was hard, but I was devoted, even amidst the smoky aromas. But I’ll tell you a secret, I may have tasted just the sauce. It planted a seed in my vegetarian heart and I haven’t forgotten now that I eat meat, that I have been craving jerk chicken since that very moment.  One day I vow to go back to Jamaica and try (gorge myself on) the real deal.  Until then, I have no qualms making it at home, but it’s never the same is it? I certainly don’t have an allspice tree in my backyard. (more…)
